Fattoria di Fèlsina Félsina located in Italy’s Chianti Classico region produces olive oils in addition to wines. The name Fattoria means farm. Félsina is known for its unique single-varietal olive oil. They established four different olive groves. The olives are hand harvested just as they begin veraison and quickly taken to the facility for processing. For the olive oil production, Félsina uses the Veronelli’s Method for processing the olives into olive oil. This method is considered to be one of the best ways to produce olive oil. The first step in the process, pictured above, is separating the olives from the leaves and stems. The second step is to separate the pit from the olive. Finally the oil is extracted, pictured below. The olive oil is pumped into stainless steel tanks and ready for bottling. Bottling takes place on demand, pictured right. Labels include the vintage year, polyphenol and acid levels. Production includes Leccino, Pendolino, Moraiolo and Raggiolo olive oils. Olives are harvested by hand and quickly transferred to the processing unit. In addition to producing single varietal olive oils, Félsina produces a multivarietal oil.
